100 grams sugar
4 egg yolks
300 milliliters cold Whipped cream
mixed Berry (for decoration)

Preparation steps

Rinse the blueberries, drain on paper towels and bring to boil along with 20 grams (approximately 1 ounce) of sugar in a saucepan while stirring. Cook for about 5 minutes and let cool down afterward.

Line a round cake tin (20 cm, approximately 8 inches) with cling film. Beat the remaining sugar together with the egg yolks until fluffy white.

3.

Carefully fold the cooled blueberries into the stiff cream. Place the mixture into the mold, cover and freeze overnight in freezer. To serve, turn out of the pan, remove the cling film and decorate with berries.
