1 onion
2 ½ liters water
100 milliliters White vinegar
2 Tbsps salt
1 bay leaf
1 thyme
1 tsp white peppercorns
4 freshly trout (250 grams)

Preparation steps

1.

Rinse the soup vegetables and peel the onion. Chop everything into cubes and put in a pot.

2.

Add the water, vinegar, salt, herbs, and peppercorns. Simmer for 30 minutes.

3.

Thread kitchen string through the trout's tail and gill cover. Pull trout into a circle and knot the string.

4.

Set the trout in a vegetable steamer into the simmering broth and poach over low heat 12–15 minutes.

5.

Lift the steamer with the fish out of the pot. Serve the trout with melted butter and lemon wedges.
