Blini with Smoked Salmon and Sour Cream
Separate eggs. Mix two flours together. Dissolve yeast in milk and mix with melted butter and salt. Add to flour and whisk until smooth. Cover and let rise in a warm place.
Beat egg whites until stiff and fold into batter.
Heat some butter in a pan, put few tablespoons of batter and press to make small pancakes. Cook until golden brown on both sides. Prepare all pancakes in the same manner. Serve garnished with caviar, salmon and sour cream.
