200 grams Crème fraiche
80 grams sugar
½ Vanilla bean (sliced)
250 grams Whipped cream
mint (for the garnish)

Preparation steps

Rinse blackberries and drain well. Puree 3/4 of blackberries in a blender and press through a sieve to remove seeds if desired. Reserve remaining fruit. Mix crème fraîche with sugar and vanilla in a bowl until sugar crystals have dissolved. Stir blackberry puree into crème fraîche mixture.

Beat cream until semi-rigid and fold into blackberry mixture. Pour blackberry mixture into a shallow metal tray and place in the freezer for at least 4 hours (stirring about every 20-30 minutes). Or pour blackberry mixture into an ice cream machine to finish. To serve, scoop ice cream into small bowls and serve garnished with fresh berries and mint.
