- 1 ⅔ cups waxy potatoes (scrubbed, not peeled)
- 1.333 cups Raspberries
- 1 tsp lemon juice
- 2 Tbsps apple cider vinegar
- 1 pinch sugar
- 4 Tbsps olive oil
- 1 Batavia lettuce (torn into bite-sized pieces)
- 1 cup very fresh Salmon (cut into chunks)
- 1 cup very fresh Tuna (cut into chunks)
- 1.333 cups Prawn (ready to cook, peeled and deveined)
- 5 Chives (chopped into small rolls)
Preparation steps

Cook the potatoes for 20-25 minutes in boiling salted water. Drain, let the steam dry off, peel and cut into approx. 1 cm thick slices.

For the dressing, crush 100 g raspberries roughly with a fork. Mix with the lemon juice, vinegar and sugar and season with salt and ground black pepper. Mix in the olive oil and check the seasoning.
3.
Arrange the lettuce with the potatoes, fish and seafood and the remaining raspberries on plates. Sprinkle with chives, drizzle with dressing and serve.
