- 600 grams Beets
- salt
- 2 Tbsps White vinegar
- 1 tsp ground cumin
- 1 Tbsp sugar
- 1 handful lamb's lettuce
- 1 handful fine Frisée
- ½ Radicchio
- 3 Apple (Granny Smith)
- ½ lemon
- 100 grams Cheese such as wensleydale)
- 4 Tbsps honey
- 4 Tbsps olive oil
Preparation steps
1.
Peel beets and cut into wedges. Place beets in a saucepan, cover with water and season with salt. Add vinegar, cumin and sugar, mix, bring to a boil and cook for about 15 minutes. Drain and leave beets to cool.

Meanwhile, rinse mache and frisee lettuce, trim as necessary and spin dry. Rinse radicchio. Rinse apples, cut into quarters, remove seeds and cut into slices. Squeeze juice from lemon. Mix apples in a bowl with 2 tablespoons lemon juice. Mix beets, apples, radicchio and lettuce in a bowl and arrange on plates. Crumble cheese over the salads. Drizzle with remaining lemon juice, honey and olive oil and serve.
