700 grams Beets (pre-cooked, vacuum-packed)
2 stalks Celery
80 grams Arugula
200 grams Feta
1 large Apple (such as Granny Smith)
1 Tbsp lemon juice
2 Tbsps Nut oil
1 Tbsp olive oil
4 Tbsps apple cider vinegar

Preparation steps

Thinly slice the beet. Rinse and trim the celery. Remove any fibrous threads and thinly slice. Rinse the arugula, remove the hard stems, and spin dry. Cut the feta cheese into cubes. Rinse and quarter the apple. Remove the core and finely dice, then mix with the lemon juice. Mix both of the oils with the vinegar and lemon juice. Season with 1 pinch of salt and sugar, and whisk together. Thin with 1-2 tablespoons of water, if necessary.

Mix the beet, celery, and apple with the dressing. Transfer to plates, and top with the arugula. Sprinkle wht feta cheese over the salad and serve.
