Preparation steps

1.

For the guacamole: halve avocados, pit and scrape out pulp. Combine with lemon juice and puree. Cut tomatoes into small cubes and mix with avocado puree. Season with salt, pepper and a dash of Tabasco.

2.

For the beef steaks: peel onion and chop finely. Heat 1 tablespoon of oil in a pan and saute onion until translucent. Cool slightly and mix together with egg and thyme. Add to meat and season with salt and pepper and add enough breadcrumbs to make malleable mixture. Shape into four patties.

3.

Heat oil in a pan and cook patties for about 6-8 minutes or until golden brown on both sides.

4.

Arrange beef steaks on plates and top each with a dollop of guacamole. If desired, serve with arugula salad and snow peas.
