4 slices Entrecote (ready-to-eat, approx. 150 g each)
Dijon mustard
2 Tbsps fresh thyme (chopped)
4 slices beef ham
4 gherkins (finely sliced lengthways)
3.333 cups waxy potatoes (peeled)
4 ½ cups (princess) Green beans (trimmed)
cup dry white wine
1.333 cups cream
vegetable oil
2 Tbsps clarified butter
2 Tbsps butter
2 Tbsps Dill
thyme (to garnish)

Preparation steps

1.
Tenderise the meat and season lightly with salt and ground black pepper. Spread with mustard, sprinkle with thyme and top with ham and gherkins. Roll up and cut into 1.5 cm thick slices. Fasten each with a tooth pick.

Create potato balls using a melon baller and cook them in boiling salt water for around 15 minutes.

Blanche the beans in boiling salt water for 8 minutes. Drain and rinse with cold water.

Place the wine and the cream in a pot and bring to the boil. Stir in 2 tbsp mustard, season with salt and ground black pepper and simmer on a medium heat until the mixture thickens. Season to taste.

Fry the roulades in 2 tbsp oil in a hot pan on a high heat. Reduce the heat and leave the meat to steep for 5-8 minutes.
6.
Drain the potatoes and fry in melted clarified butter until golden brown.
7.
Stir some butter into the beans, season with salt and ground black pepper and stir in the dill.
8.
Arrange everything on preheated plates and serve garnished with fresh thyme.
