500 grams Beef (From hip or shoulder)
4 potatoes (Predominantly waxy)
3 onions
400 milliliters Beef broth
400 milliliters unsweetened Coconut milk (canned)
3 Tbsps Curry paste
4 Tbsps Palm sugar
half Limes
2 Tbsps toasted, salted Peanuts
Fish sauce
2 bay leaves

Preparation steps

1.

Rinse beef, pat dry, trim fat and cut into about 2 cm (approximately 1 inch) cubes. Rinse potatoes, peel and cut into slices. Peel onions and cut into eighths.

Add 4 tablespoons coconut milk (preferably from the thicker part at the top) to a large pot and bring to a boil. Add curry paste, stir and simmer for about 1 minute. Add beef, onion, remaining coconut milk, palm sugar, lime juice, peanuts, bay leaves and beef broth.

3.

Simmer all over low heat with lid slightly open for about 20 minutes. Then add potatoes and cook for another 20 minutes. Finally, remove bay leaves, season with fish sauce and serve.
