- 18 ozs Beef (steak)
- 2 Tbsps red Curry paste
- 1 large onion
- 3 ⅓ cups Sweet potato
- 1 tin chopped Tomatoes (small)
- ⅔ cup Coconut milk
- 2 bay leaves
- cilantro (to garnish)
- 3 Tbsps Oil

Preparation steps

Cut the meat into large cubes. Heat 2 tbsp oil in a wok and saute the meat on all sides over a high heat, until well browned. Then take out of the wok. Peel and finely dice the onion. Peel and dice the sweet potatoes. Heat the rest of the oil in the wok, add the curry paste and cook briefly. Add the diced onion and sweet potatoes and fry, stirring. Return the meat to the wok and add the coconut milk, chopped tomatoes and bay leaves. Bring to the boil over a low heat and simmer gently for 20-30 minutes.

Serve with fragrant rice.
