- 1 kilogram Beef
- 2 sticks Leeks
- 1 kilogram Tomatoes
- 2 onions
- 2 garlic cloves
- 2 Tbsps olive oil
- 1 Tbsp Tomato paste
- 150 milliliters Red wine
- 400 milliliters Beef broth
- 1 bay leaf
- 100 grams black Olives (pitted)
Preparation steps

Rinse beef and pat dry. Rinse leeks and cut into rings. Scald tomatoes in hot water, rinse in cold water, peel, quarter, core and dice finely. Peel and chop onions and garlic. Brown beef in hot oil, mix in onions, garlic and tomato paste and sauté briefly. Deglaze with red wine and some beef broth.

Add bay leaf to beef mixture and simmer gently, stirring occasionally, for about 30 minutes. Add beef broth as required and mix in leeks and tomatoes. Season with salt and pepper and simmer another 1-1.5 hours. Add olives during last 15 minutes of cooking. Season goulash with salt and pepper and serve.
