½ Celery root
500 grams Beef (such as: brisket)
600 grams beef marrow
1 tsp salt
1 tsp peppercorns
3 sprigs parsley

Preparation steps

1.

Cut onion in half and brown, cut-side down, in a dry pan. Remove from pan and let cool.

2.

Peel and chop carrot. Rinse and chop leek and celery.

3.

Put beef and bones in a large pot with cold water and bring to a boil. Skim off foam. Reduce heat and simmer for about 2.5-3 hours. Add more water, if needed. After about 1 hour, add prepared vegetables and salt. After about 1.5 hours, add peppercorns and parsley.

4.

When cooked, remove beef, bones and vegetables from broth. Pass broth through a sieve lined with cloth. Serve broth as desired.
