2 onions (halved)
6 cups Oxtail (chopped)
2 carrots (diced)
1.333 cups Celeriac (peeled and diced)
4 cloves
2 bay leaves
1 tsp peppercorns
½ tsp Juniper Berry
To garnish
2 carrots (sliced)
2 sticks Celery (sliced)
1 onion (diced)

Preparation steps

1.
Fry the onions in a large soup pot with the cut side down until golden brown. Add 1.5 litres cold water and the ox-tails. Bring to the boil slowly.

Add the carrots, celeriac, cloves, bay leaves, pepper and juniper berries and simmer on a low heat for around 2 1/2 hours with a lid half on.
3.
Sieve the soup into another pot. Remove the meat from the bone and rip into small pieces. Bring the broth to the boil (approx. 1 litre) add the garnish and the meat and simmer for another 10 minutes. Season with sherry and salt.
