- 300 grams Rump steak (lean beef)
- 1 Tbsp clarified butter

- 1 lemon
- 2 Tbsps white balsamic vinegar
- 4 Tbsps olive oil
- 1 pinch sugar
- salt
- peppers
- 50 grams grated Parmesan

Preparation steps

Preheat the oven to 100 ° C.

Heat butter in a pan and sear steak on high heat. Season with salt and pepper and wrap in aluminum foil, let stand for about 20 minutes in preheated oven at 100°C (approximately 200°F).

Rinse and spin dry arugula. Arrange on 4 plates. Rinse lemon and cut 4 slices. Squeeze juice out of the rest of lemon. Combine lemon juice with vinegar and oil. Season with sugar, salt and pepper. Remove meat from oven, cut into thin strips and arrange on top of arugula. Drizzle with dressing and sprinkle with Parmesan. Garnish with lemon slices and serve.
