Preparation steps

Rinse arugula, trim if necessary and drain. Put arugula in a bowl.

Rinse lemon with hot water, pat dry, finely grate peel and squeeze the juice from lemon. Mix lemon zest and lemon juice in a bowl, add honey, oil and season with salt and pepper. To serve, drizzle oil mixture over arugula, sprinkle with Parmesan cheese and pomegranate seeds.
