Arugula Salad with Pomegranate and Parmesan
This arugula salad contains calcium and protein from the parmesan and antioxidants from the pomegranates, which help protect the body's cells.
Add some grilled chicken or tofu to this salad to transform it from an appetizer into a main course.
Rinse arugula, trim if necessary and drain. Put arugula in a bowl.
Rinse lemon with hot water, pat dry, finely grate peel and squeeze the juice from lemon. Mix lemon zest and lemon juice in a bowl, add honey, oil and season with salt and pepper. To serve, drizzle oil mixture over arugula, sprinkle with Parmesan cheese and pomegranate seeds.
