- 2 Tbsps vegetable oil
- 250 grams Arugula
- 4 Tbsps balsamic vinegar
- 1 tsp honey
- 1 Tbsp lemon juice
- 5 Tbsps grapeseed oil
- 250 grams Blackberry
Preparation steps

Preheat the oven to 120 ° C upper and lower heat.

Rinse meat, pat dry and season with salt and pepper. Heat oil in a hot pan and brown meat on all sides. Remove meat from the pan and place on the grid in the oven (place drip pan underneath), roast in preheated oven at 120°C (approximately 250°F) for about 30 minutes (meat thermometer should show 55°C) (approximately 130°F).

Rinse and spin dry arugula. Whisk balsamic with honey, lemon juice and oil. season with salt and pepper. Rinse and pat dry blackberries.

Remove fillet from the oven and let rest for a few minutes.Slice and then cut into bite-sized pieces.

Arrange arugula on plates, spread with beef and berries and drizzle with the dressing, serve immediately.
