250 grams dried Borlotti bean
1 onion
1 garlic clove
2 Tbsps olive oil
½ l Vegetable broth (vegan)
2 Tbsps Soy creamer
¼ tsp Orange zest
2 Tbsps Orange juice
2 Tbsps finely chopped Fresh herbs (such as dill, basil, parsley)
salt
freshly ground peppers

Preparation steps

Soak the beans overnight.

Peel and finely chop the onion and garlic and sauté in some oil. Deglaze with the broth and add the drained beans. Cook for about 45 minutes until soft, stirring occasionally.

Drain the beans and then purée and strain through a sieve. Mix in the soy creamer, the orange zest and juice and as much olive oil as is needed to create a thick paste. Stir in the herbs and season with salt and pepper.

Transfer the dip to a bowl and serve.

Perfect for dipping crackers or vegetable sticks.
