- 4 medium eggs
- 2 cups canned Tuna steak (in brine)
- 1 ½ cups Broad bean (shelled)
- 4 sticks Celery (finely sliced)
- 4 Vine Tomatoes (sliced)
- 1 Red onion (finely sliced)
- ½ cup pitted green olives
- 2 Tbsps extra virgin olive oil
- 2 Tbsps lemon juice
- 2 heads Romaine lettuce (chopped)
- salt
- freshly ground Black pepper

Preparation steps
1.
Cook the eggs in a large saucepan of boiling water for 10 minutes. Drain and refresh immediately in iced water.
2.
Crack and peel the eggs before cutting into quarters.
3.
Toss together the tuna, broad beans, celery, tomatoes, onion, and olives with the olive oil, lemon juice and plenty of seasoning.
4.
Arrange the lettuce in bowls and top with the dressed vegetables, tuna, and olives. Sit the egg quarters on top and serve.
