Preparation steps

1.

Toast the almonds in a dry skillet until fragrant and golden brown. Beat the cream to semi-stiff peaks, Slice the star fruit.

2.

Place the sugar in a pan and cook over low heat until caramelized. Add 1-2 tablespoons of water and stir vigorously. Peel the banana, halve lengthwise and divide among 4 dessert bowls. Top with the ice cream, star fruit and whipped cream. Coarsely chop the almonds and sprinkle over the top and drizzle the caramel sauce over.
