Fried Banana Fritters with Star Fruit
With a sharp knife, cut rice paper into 8 pieces and place between damp kitchen towels.
Peel bananas and halve lengthwise. Place a mint leave on each banana half and wrap in a rice paper triangle. In batches, fry bananas in hot, melted butter.
In a pan, cook sugar and butter until golden and caramelized. Deglaze with a dash of wine. Slice star fruit. Divide caramel sauce among plates, top with fried bananas and garnish with star fruit slices and the mint leaves.
