Both the bananas and the walnuts in this recipe are an excellent source of vitamin B6 and magnesium. Vitamin B6 helps improve brain performance and is good for the nervous system while magnesium is important for a healthy heart!
If you do not like walnuts, try topping the banana loaf with other nuts like pecans.

- 2 cups unbleached flour
- ½ tsp baking soda
- ¾ tsp salt
- 0.333 cup Shortening
- 0.333 cup butter
- 1 cup sugar
- 2 extra-large eggs
- 3 ripe Banana (mashed)
- 1 cup cream
- 1 tsp vanilla extract
- 1 cup chopped Walnut (divided)
Preparation steps

Preheat oven to 350º F. Line a 9 x 5 x 3 loaf pan with parchment paper and set aside.

Mix flour, baking soda and salt in medium size mixing bowl with whisk.

In a separate bowl cream together shortening, butter and sugar. Add eggs one at a time, beating well after each addition. Add in bananas, cream, vanilla and 3/4 cups of the nuts until well incorporated. Mix in dry ingredients a little at a time until all combined.

Pour into prepared pan; top with remaining nuts. Bake for 60-75 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
