- 1 Tbsp vegetable oil
- ⅔ cup Bacon (diced)
- 1 cup Meat (for stewing, e. g. chicken or beef, cut into strips)
- 1 onion (sliced)
- 2 yellow Bell pepper (diced)
- ⅓ cup tomato puree
- 3 ½ cups Meat stock
- ⅜ cup Pickle juice
- 1 bay leaf
- 2 gherkins (sliced into strips)
- ⅔ cup pitted green olives (drained)
- 1 Tbsp lemon juice
- 2 Tbsps parsley
- small lemons (to garnish)

Preparation steps

Put the oil in a hot pan and sear the bacon and meat. Add the onion and peppers and fry together for 4-5 minutes. Stir in the tomato purée and cook briefly, then deglaze with the stock and pour in the pickling liquid. Add the bay leaf, bring to the boil and simmer gently for around 10 minutes.

Add the gherkins and olives and heat through. Season to taste with lemon juice, salt and ground black pepper. Arrange in bowls and serve garnished with parsley and lemon slices.
