- For the crust:
- ½ cup butter (softened)
- ½ cup sugar
- 1 egg (beaten)
- 1 ⅔ cups gluten-free all purpose flour
- 3 Tbsps cocoa powder
- 1 tsp baking soda
- For the filling
- 2 ¼ cups cheese curd
- 2 tsps vanilla extract
- 2 eggs
- ½ cup butter (softened)
- ½ cup sugar

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 23cm|9" springform tin.
2.
Mix together all the ingredients for the crust in a mixing bowl until the mixture forms a dough.
3.
Press 3/4 of the dough onto the base of the tin.
4.
For the filling: beat together all the ingredients until well blended. Spoon onto the crust.
5.
Tear the remaining dough into pieces and arrange on top of the filling.
6.
Bake for about 1 hour until the edges are golden. Cool completely in the oven, before removing from the tin.
