2 large ripe Peaches
2 Tbsps Pastry flour
4 thin Turkey cutlets (150 grams)
salt
freshly ground peppers
2 Tbsps vegetable oil
100 grams grated Gruyere
2 Tbsps slivered almonds

Preparation steps

1.

Blanch peaches for a few seconds in hot water, remove and peel skin. Cut peaches in half, remove pit and cut into wedges.

Place flour on a plate. Season turkey cutlets with salt and pepper and dust in flour. Heat oil in a pan and fry cutlets over medium heat on each side for 2 minutes.

3.

Place cutlets side by side in an ovenproof dish. Lay peach slices on top and sprinkle with cheese and almond slices. Bake in a hot oven at 220°C (approximately 425°F) for about 5 minutes until golden brown. Remove from oven and serve.
