- 800 grams Beef fillet (ready to cook)
- salt
- freshly ground peppers
- 2 Tbsps vegetable oil
- 1 bunch Lemon thyme
- 3 sprigs rosemary
- 3 egg whites
- 1.6 kilograms rough Sea salt

Preparation steps

Rinse meat, pat dry, trim and season with salt and pepper. Heat oil in a pan and sear meat on all sides. Remove from heat and let cool.

Preheat the oven to 200°C (approximately 400°F).

Rinse herbs, shake dry, strip the leaves or needles from the stems and finely chop. Whisk egg white until slightly stiff and mix with herbs and salt. Spread half of salt mixture on a baking sheet lined with parchment paper and place meat on it. Cover meat with remaining mixture, press firmly and bake in preheated oven for about 30 minutes.

Remove meat from the oven, leave salt crust in place and serve meat sliced. Season to taste and serve garnished with fresh herbs.
