- 4 large, baking potatoes
- 1 Tbsp Oil
- Sea salt
- 2 mixed Fresh herbs (e. g. chives, parsley, tarragon, basil, thyme, mint)
- 1 small lemon (juice)
- 2 tsps Dijon mustard (optional)
- 1 cup unsalted butter
- freshly ground Black pepper

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6.

Prick the potatoes several times with a fork. Rub the oil over the potatoes, then scatter over the sea salt. Place directly on the shelf in the oven and bake for 1 1/4-1 1/2 hours, (depending on the size of the potato) until golden-brown and crisp on the outside and soft on the inside. Split each baked potato in half.
3.
Place the herbs in a food processor with the lemon juice, mustard and butter and blend until combined. Season to taste with sea salt and pepper and spoon into a serving bowl.
4.
Serve the hot potatoes with the herb butter.
