- 400 grams young potatoes
- 3 Tbsps olive oil
- salt

- 100 grams Arugula
- 1 bunch Dill (30 grams)
- 200 grams Smoked salmon
- 300 grams cream cheese
- 50 milliliters Whipped cream
- 1 Tbsp lemon juice
Preparation steps

Preheat the oven to 200 ° C top and bottom heat.

Rinse and halve potatoes. Arrange potatoes, cut sides up, on a lined with parchment paper baking tray. Drizzle with olive oil, season with salt and pepper and bake in preheated oven at 200°C (approximately 400°F) for 20-25 minutes or until golden brown. Meanwhile, rinse and shake dry arugula. Rinse dill, shake dry and chop finely. Cut smoked salmon into small cubes, combine with cream cheese, whipping cream and dill. Season with salt and pepper and drizzle with lemon juice. Arrange potatoes on plates, top with a dollop of salmon cream cheese and garnish with arugula. Serve immediately.
