- 8 Padrón peppers (mild peppers)
- 100 milliliters olive oil
- Sea salt
- 1 garlic clove
- 400 grams Goat cheese
- 1 Tbsp lemon juice
- freshly ground peppers
- 1 Tbsp scallions

Preparation steps

Rinse pimentos, cut off lids and remove seeds and ribs. Heat oil in a large roasting pan and cook peppers and lids for about 10 minutes or until golden brown, turning often. Add oil to the pan as needed. Remove peppers from pan and drain on paper towels. Season with sea salt.

Preprare filling. Peel garlic and squeeze into a bowl. Add cheese and season with lemon juice, salt and pepper and mix well. Stuff peppers with cheese mixture and top with lids. Sprinkle with chives and serve.
