Preparation steps

For the pancakes: whisk flour with milk until smooth, add eggs and season with salt. Let rest for about 15 minutes. Heat butter in a pan and cook 8 thin pancakes, one at a time, until golden brown on both sides.

Preheat the oven to 200 ° C convection.

For the filling: peel shallot and garlic and chop finely. Dice bacon finely. Rinse and spin dry spinach, chop. Heat oil in a pan and saute shallot, garlic and bacon briefly. Add spinach and saute for a few minutes or until all liquid is evaporated. Remove from heat, season with salt and nutmeg and allow to cool. Cut mozzarella into small cubes, mix with spinach and stuff pancakes with the mixture. Arrange in a baking dish and dot with dollops of butter and sprinkle with Parmesan. Bake in preheated oven at 200°C (approximately 400°F) for about 15 minutes. Remove from oven and serve.
