4 eggs
350 grams Pastry flour
500 milliliters milk

Preparation steps

1.

Preheat the oven to 80°C (approximately 175ºF).

For the pancakes, whisk the eggs and flour and stir in the milk. Season with salt and pepper and leave to rest for 20 minutes.

For the filling, trim, rinse and drain the spinach. Blanch in a pan of hot water, pour into a sieve and allow to drain.

Peel and chop the onions and garlic. Fry in a pan with some olive oil. Chop and add the spinach and season with nutmeg, salt and pepper. Leave to cool and then purée.

Crumble the ricotta and mix with the spinach. Add half the Parmesan. Stir in the egg yolk and season with pepper.

In a nonstick pan, cook 12 pancakes successively in butter. Keep warm in the oven until the last pancake is ready.

Remove the pancakes and increase the oven temperature to 200°C (approximately 400ºF).

Place the hot pancakes individually on a tray. Spoon the filling on top and roll the pancakes up. Lay them next to each other in a large, greased baking dish and shower with the cheese.

Bake for about 20 minutes and serve hot and seasoned with pepper.
