28 ozs Porcini mushroom
1 shallot
salt
freshly ground peppers
2 sprigs thyme
2 Tbsps olive oil
2 ozs Madeira Wine
For the garnishing
2 Tbsps scallions

Preparation steps

1.

Butter shallow baking dish.

2.

Clean mushrooms and cut into bite-sized pieces. Peel shallot and dice finely.

3.

Season mushrooms with salt and pepper. Rinse and dry thyme, pluck off leaves. Sprinkle mushrooms with thyme and drizzle with oilve oil. Arrange mushrooms in a dish and drizzle with olive oil.  

4.

Mix mushrooms well. 

5.

Roast under a hot broiler until mushrooms start to brown lightly, watching carefully. Deglaze pan with Madeira and roast for 10-20 minutes more or until browned to your taste, watching carefully as well. 

6.

Sprinkle mushrooms with chives and serve.
