2 tsps extra virgin olive oil
4 smoked, boneless Chicken breasts (4 small or 2 large, cut in half lengthwise)
1 cup fresh Mushrooms (sliced)
½ cup water
½ cup low-sodium Chicken broth
1 Tbsp reduced-sodium soy sauce
1 tsp Rice vinegar
1 tsp fresh ginger (minced)
1 clove garlic cloves (peeled and minced)
2 Tbsps cold water
1 Tbsp Corn starch

Preparation steps

Preheat oven to 350° F.

Heat a large nonstick skillet over medium-high heat. Add olive oil to the skillet. When hot but not smoking, place chicken in skillet and brown for about 2 minutes on each side, turning once.

Transfer chicken to a medium baking dish and bake uncovered for 35 to 40 minutes, or until juices run clean when cut with a fork.

While chicken is cooking, combine mushrooms, water, chicken broth, soy sauce, vinegar, ginger,

and garlic in a medium saucepan over high heat and bring to boil. Reduce heat to low.

In a small bowl, add cold water 1 tablespoon at a time to cornstarch and stir until cornstarch dissolves. Add to saucepan. Cook, stirring constantly, for 2 minutes until sauce is thick and smooth.
7.
To serve, place baked chicken on serving plates and spoon mushroom sauce over the top.
