1 Preheat the oven to 200°C | 400F | gas 6.
2 Wash the chicken drumsticks, pat dry and put into a bowl with the oil, mustard, honey and barbecue seasoning. Mix well and marinate in the refrigerator for at least 1 hour.
3 Then transfer to a baking dish and bake in the preheated oven for about 15 minutes, brushing frequently with the marinade and adding a little of the chicken stock from time to time.
4 Meanwhile clean the mushrooms and add to the baking dish. Mix the remaining marinade with the rest of the stock and add to the dish.
5 Sprinkle the chicken drumsticks with grated cheese and increase the oven temperature to 220°C | 425F | gas 7. Bake for a further 5-10 minutes.
