1 red Bell pepper (rinsed; seeded and halved)
1 orange Bell pepper (rinsed; seeded and halved)
1 yellow Bell pepper (rinsed; seeded and halved)
5 Tbsps olive oil (divided; plus extra for drizzling)
salt (to taste)
2 cloves garlic cloves (peeled and minced)
6 slices Baguette (cut into large cubes)
12 cherry Tomatoes (rinsed and halved)
12 pitted green olives (halved)
4 scallions (rinsed and chopped)
12 ozs mini (bocconcini) Mozzarella (drained)
2 tsps Caper
5 ozs canned, solid white albacore Tuna in oil (drained)
freshly ground Black pepper (to taste)
1 small white onion (peeled and cut into rings)

Preparation steps

1.
Position oven rack in the center of the oven. Preheat the oven to 400ºF. Brush the bottom of a baking dish lightly with olive oil.

Brush the pepper halves with olive oil and season to taste with salt. Place pepper halves in the prepared baking dish.

Heat 3 tablespoons of oil in a skillet; add the garlic and cook until fragrant about 45 seconds. Add the cubed bread and cook until golden brown on all sides. Remove croutons from skillet and drain on paper towels.

Fill the pepper halves with croutons, cherry tomatoes, olives, spring onions, mozzarella, capers and tuna. Season to taste with salt and pepper. Drizzle with olive oil and sprinkle with slice onion rings.
5.
Bake in preheated oven for 15 to 20 minutes, or until the peppers are tender and the filling is heated through. Serve.
