Baked Drumsticks with Country Vegetables
Ingredients
- For the drumsticks
- 8 Chicken drumstick
- salt
- peppers
- ground paprika
- 3 Tbsps olive oil
- For the vegetables
- 1 can chickpeas
- 1 sm jar red Beans
- 3 carrots
- 2 onions
- 4 sprigs Lovage
- 1 stick Celery
- 1 Zucchini
- 3 Tbsps olive oil
- 400 grams Tomatoes
- ½ tsp sugar
- salt
- peppers
- For serving
- 8 small Sausage
- 1 Tbsp clarified butter
Preparation steps
Preheat oven to 200°C (approximately 400°F).
For the drumsticks: Rinse and pat dry drumsticks, season with salt, pepper and paprika, coat with oil and place in a baking dish. Bake until golden brown, about 30 minutes.
For the vegetables: Drain and rinse chickpeas and beans. Peel and mince carrots. Peel and thinly slice onions. Rinse and shake dry lovage, save some of the leaves as a garnish and chop the stalk. Rinse, trim and chop celery and zucchini. Heat oil in a pan and cook carrots, onions, lovage, celery and zucchini until soft. Add beans, chickpeas and tomato puree. Cover and simmer mixture for about 8 minutes. Season with salt, pepper and sugar.
Heat clarified butter in a small pan. Cook sausages.
Plate vegetables, add drumsticks and sausages and garnish with lovage. Serve immediately.
