- 1 shallot
- 1 garlic clove
- 3 Tbsps green, pitted Olives
- 2 sprigs Sage
- 2 stalks Celery
- 6 ripe Tomatoes
- 4 Chicken legs
- salt
- peppers (freshly ground)
- 2 Tbsps olive oil
- 150 milliliters dry white wine
- 350 milliliters Chicken broth
Preparation steps

Peel the shallot and garlic and chop fine. Drain the olives. Rinse the sage, shake dry and pluck the leaves from the stems. Rinse the celery and cut into rings. Blanch the tomatoes, rinse with cold water, peel, remove seeds and cut into cubes. Rinse the drumsticks and pat dry. Season drumsticks with salt and pepper and cook in hot oil until golden brown.

Add shallot, garlic, celery and sage leaves to the pan and sauté briefly. Add diced tomatoes and olives. Pour in wine and chicken broth. Season with salt and pepper to taste. Simmer for 20-25 minutes over medium heat. Serve in a warmed dish.
