Preparation steps

Rinse cod fillets, drizzle with lemon juice and season with salt. Crumble goat cheese and mix with breadcrumbs, a little chopped thyme and 1 tablespoon butter. Spread mixture on cod fillets. Place fillets on a buttered baking sheet and bake in a preheated oven at 200°C (approximately 400°F), 15-20 minutes.

Peel and slice onions. In a pan, sauté onions in oil. Press garlic through a garlic press into the pan. Stir in sugar and cook until caramelized. Deglaze with wine and simmer about 5 minutes. Transfer onion mixture to plates and top with cod. Serve garnished with thyme sprigs.
