1 tsp herbes de Provence

Preparation steps

Peel onions and cut into thin rings. Heat oil in a pan and cook onions over medium heat until caramelized and golden. Remove from pan and keep warm.

Season steak generously with salt and pepper and sprinkle with herbes de Provence. Massage salt and spices into steak and press firmly into place with fingers. Heat oil in a heavy skillet and sear steak over high heat on both sides until brown. Remove pan from heat and cover. Let meat cook in pan to desired doneness without additional heat, until rare, medium or well-done. Cooking time may vary, according to thickness of steak. To serve, place steak on a preheated plate and decoratively pile caramelized onions on steak.
