- 1 chicken (about 1.2kg)
- salt
- freshly ground peppers
- 400 grams shallots
- 400 grams small, waxy Sweet potato
- 2 tart Apple
- 1 bunch thyme
- 2 dried marjoram
- 3 lemons
- 5 Tbsps vegetable oil
- 125 milliliters chicken stock (from a jar)
- 2 garlic cloves
- 1 bunch parsley

Preparation steps

Cut chicken into 10 pieces, rinse and pat dry. Season with salt and pepper. Arrange in a roasting pan. Peel shallots and halve, if desired. Peel potatoes and cut into wedges. Rinse apples, cut into wedges and core. Arrange shallots, potatoes and apples between chicken pieces. Rinse herbs and shake dry, pluck off leaves and chop, sprinkle over meat and vegetables. Squeeze lemon juice. Mix juice with oil and broth, season with with salt and pepper. Pour marinade over chicken and bake in preheated oven at 200°C (approximatley 400°F) for about 35-40 minutes.

Rinse parsley and shake dry, pluck off leaves and chop. Remove chicken from the oven and sprinkle with parsley. Serve.
