- 1 Roasted Chicken (approximately 1.4 kg)

- freshly ground peppers
- 30 milliliters Canola oil
- 3 tsps sweet ground paprika
- ½ tsp ground dried rosemary
- 1 kilogram small, new potatoes
- 300 milliliters dry white wine
- 1 handful flat-leaf parsley

Preparation steps

Preheat the oven to 160 ° C convection preheat.

Rinse and pat dry chicken. Season inside and out with salt and pepper. Combine canola oil with paprika and rosemary powder, coat chicken with the mixture.

Peel and rinse potatoes, place into a baking dish and add white wine. Place chicken onto an oven rack and place potato pan directly underneath. Roast chicken in preheated oven at 160°C (approximatley 325°F) for about 2 hours. Check chicken for readiness by pricking with a fork (juices should run clear). Rinse parsley and shake dry, pluck off leaves.
4.
Remove chicken from the oven and cut into serving pieces. Season with salt and pepper. Spread parsley and chicken on top of potatoes and serve.
