2 tsps Corn starch
4 Tbsps sugar
1 egg yolk
For the Baked Apples
¾ cup sliced almonds
2 tsps raisins
3 Tbsps powdered sugar
1 generous pinch ground cinnamon
¼ cup marzipan paste (finely chopped)
4 cooking Apple (e. g. Boskop), rinsed, dried and cored
butter (to grease the dish)
1 ½ Tbsps butter (flaked)
powdered sugar (to dust)

1 Citrus juicer, 1 Tablespoon, 1 Large knife, 1 Small knife, 1 Cutting board, 1 deep bowl, 1 Immersion blender, 1 Toaster, 1 Small bowl, 1 große Bowl, 1 Whisk, 1 Salad spinner

Preparation steps

Heat the oven to 180°C fan assisted / 200°C conventional / 400°F / gas 6.

To make the custard, reserve 3-4 tbsp of milk, bring the remaining milk to a boil with the vanilla extract and remove from the heat.

Combine the sugar and corn starch and mix to a smooth paste with the reserved milk. Stir in the egg yolk and combine well.

Stir the egg mixture into the cooled milk and return to the heat. Heat the mixture, stirring constantly (do not allow to boil!) until it thickens and becomes a smooth sauce. Let cool, stirring occasionally.

To make the filling, mix half the flaked almonds with the raisins, 1 tbsp of confectioners’ sugar, the cinnamon and the chopped marzipan.
6.
Fill the apples with the mixture and place in a buttered oven-proof dish. Dust with the remaining confectioners’ sugar, dot with butter and bake for 30-40 minutes.
7.
Remove from the oven and arrange on plates. Pour over the custard, scatter with the remaining flaked almonds and serve dusted with confectioners’ sugar.
