Preparation steps

For the dough: Dissolve the yeast with the sugar and 400 ml (approximately 1 1 /2 cup) of water. Let stand for 10 minutes. Mix the salt with the flour and softened butter. Knead into a smooth dough. Divide into 10 balls. Brush a baking sheet with melted butter and place the balls on the sheet. Brush the balls with melted butter and cover loosely with a kitchen towel. Let rest for 1 hour.

In the center of each ball, form a hole and form into a bagel. In a saucepan, mix 1 liter (approximately 4 cups) of water with the sugar and baking soda. Bring to a boil. Line a baking sheet with parchment paper. Place a pan filled with water in the oven to form steam.

Boil the bagels in portions for one minute on each side. Drain and place on the baking sheet. Mix the egg white with 1 tablespoon of water and brush over the bagels. Sprinkle half the sesame seeds. Bake at 220°C (approximately 425°F) for about 25 minutes. Let cool before serving.
