- 200 grams Mozzarella
- 2 Tomatoes
- 2 shallots
- 8 slices Bacon
- 4 Tbsps Mayonnaise
- 1 Tbsp sharp Mustard
- salt
- cayenne pepper
- 4 Whole-wheat tortillas
- 250 cooked ham (sliced)
- 1 Tbsp chopped parsley (for garnish)

Preparation steps
1.
Cut mozzarella into small cubes.
2.
Wash the tomatoes, cut in half, remove the seeds and dice. Finely dice the shallots. Fry bacon slowly until crispy, drain on paper towels and crumble.
3.
Stir together mayonnaise and mustard and season with a little salt and cayenne pepper. Spread on each tortilla and top with cooked ham, tomatoes, mozzarella, shallots and bacon. Roll up and cut in half diagonally. Sprinkle with parsley and serve.
