1 large Avocado
2 large Beefsteak tomato
6 slices cooked Bacon
1 tsp Dijon mustard
4 Tbsps water
3 Tbsps good-quality olive oil
1 tsp Mustard seed
1 clove garlic cloves (peeled)
freshly ground Black pepper (to taste)
1 handful Arugula
4 slices toasted Bread
butter (for toast)

Preparation steps

1.
Wash, peel and halve the avocado, remove the stone and cut each half into slices lengthwise.
2.
Wash the tomatoes, remove the cores and cut into slices.
3.
In a small bowl, combine the garlic, mustard, water and oil. Crush the mustard seeds coarsely in a mortar and add to the dressing. Press the garlic and add to the dressing. Season to taste with pepper.
4.
Arrange the tomato, avocado slices, bacon and arugula on two plates, alternating tomato, avocado, bacon and arugula. Drizzle with salad dressing and serve with buttered toast.
