12 slices Bacon
2 Tbsps vegetable oil
2 Tomatoes

4 eggs
1 handful baby Spinach
grated Parmesan (for garnish)

Preparation steps

1.

Toast bread until golden brown. Cook bacon in 1 tablespoon of hot oil until crispy. Rinse tomatoes, cut out stalks and cut into slices.

2.

Remove bacon from pan and drain on paper towels. Remove pan from heat and place tomato slices in just to warm. Season with salt and pepper.

3.

In another pan, fry eggs in remaining oil. Season with salt and pepper. On each piece of toast, add slices of bacon, tomato, 1 egg and baby spinach. Serve with Parmesan.
