Preparation steps

1.

Toast the pistachios in a dry pan until fragrant. Remove from the pan, season with salt, and let cool. Coarsely chop the mint with half of the pistachios.

Halve the avocados, remove the seeds, and scoop out the pulp. Add the avocado, remaining pistachios, and the peeled garlic to the blender. Add the lime juice to the blender, and puree completely. Mix in the sour cream, and season to taste with salt and pepper. Serve the avocado cream garnished with the pistachio-mint mixture.
