Avocado and Grains
Rinse the grain blend under cold water. Place in a pot, cover with the broth and bring to a boil. Cover and simmer over low heat until cooked, about 30 minutes.
Halve the avocado lengthwise, remove pit and cut into thin slices. Place in a bowl, drizzle with lemon juice and cover.
Peel and finely chop the onion. Wipe the oyster mushrooms with a damp paper towel and cut into halves or quarters.
Heat the oil in a large non-stick pan set over low heat. Add the onion and cook until translucent. Increase to high heat, add the oyster mushrooms and cook until golden, about 3 minutes. Stir in the grains and avocado, and cook for 2 minutes. Season with salt and pepper to taste. Serve garnished with the parsley or chives.
