200 grams Crème fraiche

2 Tbsps freshly grated Parmesan

150 grams Goat cheese (log shape)

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Grease a 24 cm (approximately 9 inch) tart pan with 1 tablespoon of oil.

Roll out the pastry and line the bottom of the pan.

Peel and trim the bottom third of the asparagus. Mix the crème fraîche with the eggs and cheese. Season with salt, pepper and nutmeg, then spread over the pastr, leaving a 1-2 cm  (1/2-1 inch) edge. Arrange the asparagus in the pan. Cut the goat cheese into thin slices, spread over the asparagus, season with salt and pepper and drizzle with 2-3 tablespoons of olive oil. Bake in the oven for about 40 minutes until golden brown, remove and serve garnished with mint.
