200 grams small Strawberries
100 grams tender Spinach
4 Tbsps Canola oil
juice of lemons
1 tsp Apple syrup
salt
freshly ground peppers
2 tsps pickled green peppers
4 Tbsps Sour cream

Preparation steps

1.

Peel asparagus, cut off ends and cut diagonally into very thin slices. Rinse strawberries, trim and also cut into slices. Rinse spinach, spin dry and pinch back the stems.

2.

Brush four plates with 1 tsp canola oil each and line with spinach. Arrange asparagus and strawberries on top like roof tiles.

3.

Combine lemon and apple juice, salt, pepper and remaining oil. Drizzle the dressing over the salad, garnish with pickled pepper and dollop with 1 tablespoon sour cream.
